Sweet Potato Jacket

TIPS

This is also an easy meal to prep for lunches. It will fill you up and keep you full for an extended amount of time.


 

INGREDIENTS

  • 1 x sweet potato

  • 1 x Avocado mashed

  • 1⁄4 x Red onion thinly sliced

  • 1 x carrot grated

  • 1 x zucchini grated

  • 1⁄2 cup x red cabbage thinly sliced

  • 1⁄2 cup x white cabbage thinly sliced

  • 2 tbsp x Mayonnaise (good quality mayo)

  • 2 tsp x nutritional yeast flakes (optional)

  • 1⁄2 x lemon juiced


PREPERATION

  1. Pre-heat oven at 200 degrees Cut sweet potato in half

  2. With a small knife or a fork, pierce the fleshy side all over

  3. Bake for 30 minutes or until flesh is cooked all the way through

  4. Season avocado smash with salt pepper and half a lemon juice

  5. Add red onion, carrot, zucchini, and cabbages and mayo into a bowl and combine well

  6. To serve top sweet potato with avocado, slaw and nutritional yeast flakes
