Sweet Potato Jacket

This is also an easy meal to prep for lunches. It will fill you up and keep you full for an extended amount of time.
INGREDIENTS
1 x sweet potato
1 x Avocado mashed
1⁄4 x Red onion thinly sliced
1 x carrot grated
1 x zucchini grated
1⁄2 cup x red cabbage thinly sliced
1⁄2 cup x white cabbage thinly sliced
2 tbsp x Mayonnaise (good quality mayo)
2 tsp x nutritional yeast flakes (optional)
1⁄2 x lemon juiced
PREPERATION
Pre-heat oven at 200 degrees Cut sweet potato in half
With a small knife or a fork, pierce the fleshy side all over
Bake for 30 minutes or until flesh is cooked all the way through
Season avocado smash with salt pepper and half a lemon juice
Add red onion, carrot, zucchini, and cabbages and mayo into a bowl and combine well
To serve top sweet potato with avocado, slaw and nutritional yeast flakes
