Bone Broth Soup
Winter is coming …. and bone broth is my sidekick to fighting off the Night King.

Ok GOT nerd-out aside, bone broth concentrate is one of the gems I keep stocked in my fridge at all times! It’s great for adding to the base of a lot of dishes for flavour and nutrients BUT it is the most amazing added to a simple soup when a cold hits or you feel like your digestive system is running a little off. I make a large batch of this simple bone broth soup about once a month and then proceed to have it for lunches or dinners for the next week. it helps bring my body back to alignment every single time.
for this recipe, you could use any type of bone broth base but I choose to use a quality concentrate just because its a great way to have access to bone broth without storing high volumes of liquid in my fridge or freezer at one time. If you prefer to make your own though or by liquid stock that is absolutely just as good!
INGREDIENTS
1 Carrot, fine dice
1 brown onion, fine dice 2 garlic cloves, minced 1/2 cup Japanese pumpkin, fine dice 1/2 cup broccoli florets 1 pak choi, finely chopped 1 TBS Best of the Bone; turmeric bone broth concentrate 2 litres water
PREPERATION
Saute off onion, carrot, garlic and pumpkin in coconut oil
once vegetables are coloured add water and bone broth paste.
simmer for two minutes
add greens and simmer for a further two minutes
for flavour add salt and pepper
